Originally coined in Britain during the late-19th century to describe a Sunday meal for “Saturday-night carousers,” brunches today are leisurely midday meals featuring either large spreads of breakfast and lunch offerings or a special menu of lighter snacks—both usually accompanied by glasses of champagne, bubbly mimosas or Bloody Marys.

Although not technically brunch, the King of Buffets is not to be missed. Dozens of chefs work nine live cooking stations to create dishes such as juicy fried chicken with waffles and fresh berries, roasted South Carolina shrimp and grits, and baked-to-order soufflés.

Bobby Flay’s Mesa Grill brunch menu brings on the heat. Spicy scrambled eggs with green onion, jalapeño and mustard-glazed ham really pack a punch, while other zesty Southwestern flavors include a spicy chicken and sweet-potato hash or scrambled-egg chilaquiles with a roasted-tomatillo sauce.
